Cauliflower with chilli and pine nuts

Cauliflower, like other cruciferous vegies, is a good vegetable for the liver and is thought to help fight cancer. This is a lovely way to serve it!

• 1 small cauliflower
• 1.5 tablespoons olive oil
• 4 cloves garlic, crushed
• 3 tablespoons pine nuts
• 1 teaspoon dried chilli flakes
• 2 tablespoons chopped fresh flat leaf parsley

Cut cauliflower into pieces and steam until almost tender. Heat a medium sized pan and brown pine nuts lightly, moving them around the pan so they don’t burn (they don’t need any oil).  Remove from the pan and set aside.

Heat oil in the pan and cook garlic and chilli, stirring over a low heat until fragrant.  Add pine nuts and cauliflower to the pan; cook, stirring until well coated with the oil mixture.  Add parsley and serve.
