Deb’s 1/4 Cup Muesli Bars

A big thank-you to Deb Andrew for this recipe.  She has come up with a winner for the kid’s lunchbox!  It’s great for those children who aren’t getting enough of the good fats in seeds and nuts.  These fats are important for cell health, the brain, the skin and hormones!

You will need:
1.   ¼ cup wheat germ or LSA
      1 ½ cups rolled oats
      ¼ cup wholemeal plain flour, hazelnut meal or almond meal
      Good shake of mixed spice

2.   ¼  cup any dried fruit eg:- currants, craisins, apricots

3.   ¼ cup walnuts
      ¼ cup slivered almonds
      ¼ cup pine nuts, chopped pecans or chopped cashews

4.   ¼ cup sesame seeds
      ¼ cup pumpkin seeds
      ¼ cup coconut

5.   ¼ cup honey
      50g butter

6.  1 egg
      ¼ cup milk

7.  Thin ICING (optional)
      ½ cup icing sugar mixed with juice of a ¼ lime
      Poppy seeds for decoration

Method:
1. Pre-heat oven to 150 degrees (fan forced)
2. Line lamington tray with baking paper
3. Mix items in points 1, 2 3 & 4 together in a medium sized bowl
4. Gently heat items in point 5 till melted.  Pour into dry ingredients
5. Add egg and milk (point 6) to bowl and stir well
6. Press into lamington tray, then pop into the oven for 15-20 minutes
7. Let tray go cold then top with lime icing and sprinkle with poppy seeds (optional)
8. Cut into slices (makes about 14) and store in the fridge for up to a week
