These spiced nuts are easy, delicious, irresistible and (of course) healthy!
100g raw almonds
100g raw cashews
2 teaspoons olive oil
½ teaspoon ground coriander
½ teaspoon ground cumin
¼ teaspoon paprika
½ teaspoon salt
Mix spices and salt together in a bowl and set aside.
In a heavy-based pan, cook the nuts over low heat until they are heated through (3-4 minutes). Add 1 teaspoon oil, stir and mix thoroughly. Toast nuts until they are evenly browned (10-12 minutes, stirring constantly). Remove from heat, sprinkle with the spices and salt immediately. Mix thoroughly and keep aside for 10 minutes. Add the remaining oil, stir and mix until the nuts are fully coated by the spices.
Allow to cool completely before serving.
