Turkey & Rice Burgers

These turkey burgers are great as they have the protein (turkey) and the grain (brown rice) together in the one patty.  Fantastic for children who don’t eat brown rice (as they may not notice it!) or for lunch, with a green salad, when you don’t want to have bread.  Otherwise delicious served with the dipping sauce and Asian vegetables for a complete meal at dinnertime.

2/3 cup uncooked brown rice
1 ¼ cups water
1 teaspoon ground cumin
1 kg minced turkey
1 onion, chopped
2 cloves garlic, crushed
1 egg, lightly beaten
2 – 3 tablespoons soy sauce or tamari
2cm piece grated fresh ginger, chopped (optional)
Salt, pepper

Bring rice, water and cumin to boil, stir and cover with a lid.  Simmer for 30 minutes or until just cooked then remove from heat.

Mix turkey, onion, garlic, egg, soy sauce and ginger (if using), in a large bowl.  Add salt, pepper and cooked brown rice.  Combine thoroughly. Form into patties.  Brush grilling plate with olive oil or rice bran oil.  Place patties on grilling plate and grill both sides till cooked.

Dipping sauce:  Combine 4 tablespoons sweet chilli sauce, 2 tablespoons soy sauce or tamari, and 2 tablespoons lime juice in a serving bowl.
