Spiced Chicken Thighs

I am always looking for healthy alternatives to take-away food.  Here’s a really easy recipe that you might like as a good substitute for KFC!  You can use the spices on fish as well.

Ingredients:

600g chicken thigh fillets

3 tsp ground coriander

2 tsp ground cumin

1 tsp smoked paprika

1/2 tsp turmeric

Salt, pepper

Method:

Pre-heat oven to 200° celsius. 

Combine spices in a bowl and season with salt and pepper.  Coat both sides of the chicken thighs with the spice mixture.  Place on an oven tray and roast for 50 minutes or until cooked through.

Serve with summer roasted vegetables – beetroot, capsicum, eggplant, mushrooms, zucchini, tomatoes.  Delicious!
